The food in Nova Scotia definitely wasn’t the highlight of my travels in this province. I did eat a lot of fish/seafood and even though there’s nothing quite like fresh fish, how they made it what was disappointing.

Making Fish Cakes really good doesn’t take much effort. While it was nice to eat fresh fish in Nova Scotia, this recipe inspired me to make their rather bland fish cakes have a little pizazz!
Ingredients for Fish Cakes
1 pound cooked, flaked fish (any fish works, local Ontario lake fish is good)
1 cup mashed sweet potatoes (healthier and tastier than potatoes)
1 small onion, chopped
2 tablespoons olive oil
1 egg, beaten
1 tablespoon chopped fresh parsley/dill/chives/herb of choice
1 tablespoon chopped green onions
Dash each salt and pepper
1/4 cup fine dry bread crumbs
Combine all ingredients except the breadcrumbs and oil. Shape the mixture into patties. Coat the fish patties in breadcrumbs.
Preheat oven to 350 and grease pan with olive oil. Place the fish cakes on pan for 10 minutes until crisp and brown on one side, then turn and brown the other side. Serve with a chutney or salsa which has less fat than tarter sauce.
