If you’re lucky to have south facing window or an outdoor space to grow fresh herbs and veggies, summer can be the most inspiring and exciting time to cook. Herbs, especially, are super easy to grow. They continue to astound me how much they add flavour and aroma to dishes.
I wish growing season was all year round.
Since I can’t have year round gardens in this part of the world, I can do my best to preserve my herbs. My favourite way to preserve herbs is to makes tons of pesto. .
Here is directions on how to make pesto, you will need a blender (hand held also works)
1 tablespoon of toasted nuts or seeds (traditional recipes use pine nuts but really any nuts/seed work)
2 cloves of garlic (make sure it’s chopped before putting in blender)
2 cups of olive oil
3 cups of herbs (Basil, cilantro are good on their own- other combinations kale/oregano, thyme/swiss chard)
a dash of salt and pepper
Put nuts in blender and grind until fine grain. Add rest of ingredients and liquify. Place in ice cube trays and freeze. Take them out as needed.
Add to pasta, pizza, as sandwich spreads, roasted veggies or marinate for protein.
